Becoming a BBQ Pitmaster
Daniel Lubin has many years of experience as a home cook and backyard bbq pitmaster. Being a self-titled "pitmaster" was not something Daniel was personally satisfied with. On August 12, 2017, he completed world-renowned Harry Soo's Slap Yo' Daddy BBQ Pitmaster class. Harry Soo has won over 100 first place awards and over 25 grand championships; he is quite the qualified instructor!
This amazing opportunity to cook with celebrity Pitmaster Harry Soo began in his very own backyard. During this very extensive course Daniel learned: food safety, meat selection, trimming, recipes for injections, rubs, mops, sprays, sauces, temperature control, BBQ chemistry, bark formation, foiling meats, and determining "doneness". The class provided hands on training using a variety of smokers such as the Weber Smokey Mountain, Comet Kamado, Green Mountain Grill, as well as propane grills and gas ovens. Harry Soo went on to train Daniel Lubin on how to select the best woods and maintain proper fire control.
The class was an amazing opportunity and Daniel learned an incredible amount of details, recipes and processes for cooking competition BBQ!
The opportunity to work side-by-side with Harry Soo was a life changing experience as Daniel Lubin learned first hand how to smoke, grill, bake, and prepare 15 different types of meats and sides including: half-chickens, thighs, St. Louis style spareribs, Baby Back ribs, Rib Tips, Pork Butts, Beef Brisket, Sausage, Hot Links, and Santa Maria tri-tip. To wrap up this training, Daniel Lubin even learned how to prepare Harry’s famous Seared Ahi Tuna with Maui Onion Dressing.
